When I started my catering company Hedgehog Pie in 1995 in London, little did I know that I would become so obsessed with perfecting my signature hand made chocolate cup pudding that it would lead to me launching a chocolate cookery school. A date to cook dinner for the Queen with chocolate cups on the menu was how it all started and I’ll tell you the story myself if you ask me!
After 20 years in the event catering world looking after clients in The House of Lords I have retired and now concentrate only on running my chocolate school.
The Chocolate Tart cookery school started in May 2007. Situated in a picturesque courtyard setting tucked away in Congresbury. Step into chocolate heaven! The aroma of cocoa wafts out to greet you as you enter into a beautiful working kitchen full of chocolate making equipment, ready for each student to master skills that will stay with them forever.
